Clever Uses For Leftovers!

With our wonderful harvest of vegetables this year I have to be careful when I ask the kids to get me some potatoes for supper! Son, Jake got six for me the other night for supper and I ended up with a whole big bowl of mashed potatoes for supper... So mom has to get creative with leftovers! Our Monday supper was baked ham and mashed potatoes. Yum! Basically, a free meal considering we bought half a pig this summer from a MS fundraiser for only $80 or basically $1.25 a pound for chops, bacon, ham, roasts and ground sausage. Remember to take advantage of these opportunities to save your family some money and help others out.

Tuesdays breakfast was leftover mashed potatoes and ham turned into crispy fried hash browns and cubed ham. Tuesdays supper was Cheesy Broccoli Potato Soup with hot ham and cheese sandwiches, again a reasonable meal considering the broccoli and potatoes were from our garden (recipe follows).

Wednesdays supper was a Ham, Pea and Noodle hot dish that I remember my mom making when I was growing up and I still have the ham bone left for a future soup supper! Check out the picture...we fondly called this potato Mr. Potato Head!

Cheesy Broccoli Potato Soup
4 c frozen broccoli
2 c leftover mashed potatoes
2 c Velveeta Cheese
4 c milk
1 c chicken stock
1/4 tsp salt
1/8 tsp pepper

Combine all ingredients and cook on low in slow cooker for 4-6 hrs.

Ham, Pea and Noodle Hot Dish
1 can cream of celery soup
1 can cream of mushroom soup
1 c water
1 can cut mushrooms
1 bag curly noodles, cooked
2 cups frozen peas
3 cups cooked ham, diced
Salt and pepper to taste
Combine all ingredients in large casserole and cook for 1 hr at 350'.

ENJOY!

The Garden Frenzy Comes To An End!!

Where have the last two months gone?? I've been canning, freezing, canning, freezing everything I could get my hands on in the garden! And the freezer is full. A nice feeling going into winter. The kids are tired of vegetables so now I have to get creative in my uses for vegetables. I just have a few squash left so have been freezing and baking with squash. Just yesterday I made a squash bread, squash soup and chicken stew with squash! The chicken stew and squash bread turned out great, wasn't to keen on the squash soup :( DH ate it though! This picture is just one of many trips to the garden this fall.
